Vegan Cooking in Bulk

Thanks to twitter I have found a link to a story by @VegNews to give those of us who are seriously pressed for time a way to cook once each week and still have great food. 

I am so down for that!

    When I make tofu scramble, I like to make lots of extra and use it in burritos.

  2. I almost always cook in bulk, because it's near impossible for me to make things "just for two." So I always have lots of great leftovers. I especially love to make large amounts of things in pots, like soups, stews, chili, etc., because I can keep it in the fridge and eat it for lunches for the week. Or freeze it.
